As far as recipes go, this is a favorite of all kinds of eaters: the health-conscious, those who don’t like spice, those who end up pouring on the sriracha, those who are vegan, those who aren’t vegan, kiddos … the list goes on :) Our testing has been rigorous, people!

As the name suggests, this dish contains sauteed pineapple along with a veggie mixture and what we’ve called ‘fried’ rice. For those of you who are new, we fry nothing at Remedy Kitchen - in fact, we NEVER use oil. Your rice in this dish is a wild rice/basmati rice blend that we sautee with the veggie mixture in preparation for you. In addition to pineapple, the mixture consists of sauteed kale, red onion, red bell pepper, carrot, celery, garlic, ginger root, and many fragrant spices. We use a little low-sodium soy sauce for flavoring and substitute in coconut aminos (significantly less sodium than soy sauce) for the remaining liquid required for the veggie saute.

The dish will be topped off with small dices of marinated and baked tofu, sprinkled with sesame seeds. Savory, simple, and portable, this dish is ready in minutes :)
